What is secondary fermentation?Secondary fermentation is a period of ageing that occurs after the primary fermentation has been completed, either by siphoning or by transferring the fermented beer to a secondary vessel. Contrary to its name, there is actually little or no yeast activity in secondary fermentation, which is why it is also known as the conditioning stage.
